Mori's "Temporizer" feature allows you to control the press automatically by setting an on duration, off duration, and maximum pressure. For example, you may as a staring point set the on duration for one minute, the off duration for three minutes to allow the pan to fully drain, and the maximum pressure to 200 bar. The press will follow that pattern (on for one minute, off for three minutes) until the maximum pressure is reached, at which point it will stop automatically. Without this feature you can only set the maximum pressure.
